We are currently seeking a Catering Manager for the MTS Centre in Downtown Winnipeg, Manitoba, Canada.
The MTS Centre is an indoor facility at 440,000 square feet[1] (41,000 m2) in size. It can seat 15,003 spectators for ice hockey and up to 16,345 spectators for concerts.
The MTS Centre is home to the AHL's Manitoba Moose hockey team. This building is known for its excellent sound, which has made Winnipeg a more prominent location for concerts. In addition, this candidate will provide catering needs at the Canad Inns Stadium during their season.
The ideal candidate will be responsible for all catering and special events operations from origination to execution including the delegation of responsibilities.
Duties include but not limited to:
- Full working knowledge and 3 years experience in premium catering including sales, catering set up and operations is a must.
- Candidate must possess exemplary leadership skills and be able to lead and coordinate all catering operations.
- Accurately identify the needs of confirmed/potential clients and formulate operational plans to ensure successful event execution
- Continuously works to generate new business and maintains contact with present accounts.
- Responsible for handling customer complaints and rectifying problem situations.
- Responsible for extra arrangements in planning such as rental of tables, china, glassware and linen.
- Responsible for ensuring guest satisfaction with all functions booked.
- Coordinate and supervise the execution of all banquet event orders and ensure client’s specifications are adhered to and that the function runs smoothly and efficiently.
- Assist in the training and development of food and beverage line level staff in all aspects of operations.
- Have a working knowledge of menu development, setting menu prices and determining event profitability.
- Be able to work effectively with Culinary team to ensure clients expectations are met and to ensure quality standards are met at all times.
- Must be able to supervise assigned personnel.
- Hires, trains, disciplines, terminates, evaluates performance and develop each employee to their potential.
- Possess exceptional customer service skills and the ability to work with all Department Heads.
- Possess exceptional writing skills
- Develop accurate and ambitious long and short range financial objectives for the Catering Department consistent with property objectives.
- Establishes and maintains effective internal controls within the Department.
- Maintain existing programs and develop new concepts that ensure the highest possible quality of food service.
- Maximize sales potential through competitive marketing of the properties food and beverage outlets.
- Accurately forecast sales, labor and operating expenses for all catering to meet budgetary demands.
- Inventory control, food and labor cost management.
- Stand sheet preparation and requisition control.
- Planning, set-up, operations and close-out of all catering operations with emphasis on accuracy.
- Collect, record, analyze and report on all catering activity.
- Ensure adequate staffing models are in place to maximize levels for optimum service.
- Participate in the financial well being of the unit.
- Be knowledgeable of all Manitoba local and Provincial laws regarding food handling, food preparation and the responsible service of alcohol.
Job Requirements:
- Associate or Bachelors degree or current and related experience equivalent.
- Previous progressive management experience in food and beverage operations such as stadium, arena or convention center environment strongly preferred.
- Must be able to speak, read, write and understand the primary languages used in the workplace.
- Minimum 3 years management experience.
- Must understand importance of cost controls.
- Must be detail and solution oriented and possess exceptional customer service skills.
